20-Minute Arroz de Tomate: Portuguese Tomato Rice
Share
Arroz de tomate is the side dish that makes a Portuguese dinner. It should be soft and a little soupy, never dry.
Carolino rice is the secret, as it soaks up the sauce and turns creamy.
Ready in about 20 minutes, serves 4
You will need
- 250 g Carolino rice
- 300 g tomato pulp
- 1 onion and 2 garlic cloves, chopped
- 3 tbsp olive oil
- 1 bay leaf
- 900 ml hot water with 1 stock cube
- Parsley to finish
Method
- Soften the onion, garlic and bay leaf in the olive oil for 3 minutes.
- Add the tomato pulp and cook for 2 minutes.
- Stir in the rice, then the hot stock.
- Simmer gently for about 15 minutes, stirring now and then, until the rice is tender and still a little loose.
- Rest for 2 minutes and finish with parsley.
Serve it with
- Fried fish or tinned sardines in tomato
- Fried eggs for a quick meat free dinner
- Grilled chicken
If it thickens too much, add a splash of hot water. It should flow gently on the plate.
