15-Minute Bacalhau à Brás: Portugal's Favourite Cod and Egg Dish
Compartir
Bacalhau à Brás is one of the best loved dishes in Portugal. Shredded salt cod, crispy straw potatoes and soft scrambled egg, finished with black olives.
Use desalted shredded cod and it comes together in about 15 minutes.
Ready in about 15 minutes, serves 2
You will need
- 200 g shredded salt cod, soaked and desalted (see below)
- 1 bag Batata Palha straw potatoes
- 4 eggs
- 1 onion, finely sliced
- 1 garlic clove, chopped
- 3 tbsp olive oil
- A handful of black olives
- Dried parsley or fresh, to finish
Before you start
Shredded cod needs soaking. Cover it with cold water in the fridge, change the water a few times over several hours, and taste a flake before cooking. It should be pleasantly seasoned, not very salty.
Method
- Fry the onion and garlic in the olive oil until soft and golden.
- Add the drained cod and cook for 3 minutes, breaking it up.
- Stir in most of the straw potatoes.
- Beat the eggs, pour them in and stir gently over low heat until just set and creamy.
- Top with olives, parsley and the last of the straw potatoes.
Tip
Take the pan off the heat while the eggs still look a little wet. They keep cooking and stay silky.
Bom apetite!
