10-Minute Feijoada Night: A Taste of Portugal from the Cupboard
Share
If you grew up with Portuguese food, few things feel more like home than a plate of feijoada, the rich bean and meat stew that families make for long weekend lunches.
On a weeknight you can still get that taste in about 10 minutes. A good ready feijoada does the slow cooking for you; you just add the trimmings.
Ready in about 10 minutes, serves 2
You will need
- 1 tin Nobre Feijoada à Transmontana
- 2 pouches of ready rice, or Louro ready to eat rice and beans for extra beans
- A few spoons of Yoki seasoned cassava farofa (optional)
- 1 orange, sliced (optional, a fresh Brazilian-style touch)
- A handful of chopped parsley or spring onion
Method
- Empty the feijoada into a small pan and heat gently, stirring, until piping hot all the way through.
- Heat the rice following the pack instructions.
- Spoon rice onto plates, ladle the feijoada alongside and scatter with parsley.
- For a Brazilian twist, add a spoonful of farofa on the side for crunch and a few orange slices to freshen every mouthful.
Make it your own
- Got more time? Cook Caçarola Carolino rice, the creamy Portuguese grain, instead of ready rice.
- Feeding more people? Heat two tins and add a few slices of fried chouriço if you have some in the fridge.
- Sauté a handful of shredded greens with garlic for a quick side.
Saudades sorted. Bom apetite!
