Lemon and piri-piri tuna spaghetti with parsley, Yum Biltong 10-minute recipe

10-Minute Lemon and Piri-Piri Tuna Spaghetti: The Ultimate Cupboard Dinner

This is the dinner for the night the fridge is empty. A tin of good tuna, a pack of thin spaghetti and a lemon, and you are eating in about 10 minutes.

We use Tenorio tuna in olive oil with Azores lemon and piri-piri, so the flavour is already in the tin.

Ready in about 10 minutes, serves 2

You will need

Method

  1. Cook the spaghetti in plenty of salted boiling water following the pack time. Save a mug of the cooking water before draining.
  2. While it cooks, pour a little oil from the tuna tin into a frying pan and gently fry the garlic for 1 minute without letting it brown.
  3. Flake in the tuna and warm it through.
  4. Add the drained spaghetti with a splash of the cooking water, the lemon zest and a squeeze of juice. Toss until glossy.
  5. Finish with parsley and black pepper and serve straight away.

Make it your own

  • Add a drained tin of sweetcorn or peas for extra veg.
  • Stir in a few cherry tomatoes or a spoon of capers for a salty kick.
  • Prefer it milder for the kids? Use plain tuna in olive oil for their portion.
