How to prepare
Rinse off the surface salt, then soak skin side up in plenty of cold water in the fridge, changing the water about three times a day. As a guide, a whole fish of this size needs about 48 hours; cut it into pieces first and take out thin parts such as the tail and fins after 24 hours. Cook thoroughly before eating.

Storage
Store in a cool, dry place, kept in its salt until you are ready to soak it. Once soaked, keep refrigerated and cook soon.

Shipping and Temperature Notice: Dried, Salted and Cured Products
Our deli products are dried, salted and cured, like the traditional cheeses, sausages and salted fish that have been carried at room temperature for centuries. They are made to stay stable during normal room-temperature transport.
We pack every item carefully in kraft paper packaging, which absorbs moisture, and ship with standard couriers at room temperature. We do not use refrigerated or chilled transport.
We monitor the weather and may delay dispatch during exceptional heat where there is a genuine risk to the product.

Products are shipped at room temperature
Refrigerated transport is not provided
Minor changes in texture, natural oil release, surface salt bloom or firmness caused by temperature changes are not a defect
Weather conditions during transit are outside our control
All products are dispatched in good condition and in line with EU food safety rules. Choosing to buy temperature-sensitive goods that are shipped at room temperature is the customer’s decision.
